Can I disable JUST the search function from Siri AND keep the other functions like volume, sub-titles and pause stuff like that?

You could disable siri altogether, but I suspect that's not what you are asking, you can't stop siri searching without (say) stopping it opening apps and fast forwarding and things.
Thanks. They need to give Siri more language skills and better search functions. I use the Apple TV remote as an ordinary remote control as Siri is unable to search adequately.
Siri for the Apple TV is quite different from siri on your mobile devices, siri for Apple TV doesn't need more language skills as such but rather needs to understand names and movie titles and has needed to be built more or less from scratch, this is evidenced by the rather small number of languages that are available as yet. I'm sure things will get better with time.
